- :-) Spelt grains have an extra strong shell which helps retain nutrients.
- :-) Spelt is no longer commonly used because the yields are lower and the tough shell is more difficult to work with than modern wheat varieties. However, we don't mind a bit of hard work, and prefer less intensive farming wherever possible, so welcome back spelt.
